I attempted it once during my restrictive dieting years as a low calorie substitute for pasta. Lets just say it didn't fool me. <br />

Have you ever taken a bite or drink of something thinking it was something else? No? Okay, maybe that is just me...but somehow perfectly delicious food, when you are expecting something else, tastes completely wrong. <br />

Over the years I have stopped attempting to pretend foods are something other than what they are. I enjoy tofu and veggie burgers, not because they fool me into thinking I am eating meat, but because I like their unique flavors and textures. The same can be said for soy or almond milk. Does it taste like cow's milk? No. Does it taste good? Absolutely! <br />
<br />
Spaghetti squash contains many nutrients, including folic acid, potassium, vitamin A and beta carotene. It is low in calories averaging 42 calories per 1-cup serving. Plus, it is currently in season. I decided to give the spaghetti squash another chance, but I didn't want to make spaghetti. I searched for ideas to fit with the ingredients I had on hand and came up with this recipe. <br />

<strong>Spicy Spaghetti Squash with Black Beans</strong><br />

<ul><li>1 medium spaghetti squash </li>
<li>2 teaspoons olive oil </li>
<li>1/2 cup red onion, chopped <em>(I used yellow onion because that is what I had on hand</em>) </li>
<li>1 jalapeño chili, seeded, minced </li>
<li>1/2 cup red pepper, chopped </li>
<li>1 cup black beans, rinsed and drained well </li>
<li>1/2 cup sweet corn, frozen or fresh </li>
<li>1 teaspoon chili powder </li>
<li>1/2 teaspoon cumin <em>(I added this to the original recipe because, well, I like cumin)</em> </li>
<li>1/3 cup cilantro, minced </li>
<li>1 tablespoon lime juice <em>(I used the juice from 1/2 a lime)</em> </li>
<li>1 teaspoon sea salt</li>

I bring you <strong>Pumpkin Apple Crisp Muffins</strong>. It is adapted from <a href="http://allrecipes.com/Recipe/Pumpkin-Apple-Streusel-Muffins/Detail.aspx">this</a> recipe on allrecipes.com. I changed a few things and cut way back on the sugar. If you like your baked goods sweet, you may want to check out the original version. These were just perfect for my taste. I also added oats to the streusel topping, apple crisp style. <br />

<strong>Pumpkin Apple Crisp Muffins</strong><br />

Ingredients: <br />
<br />
1 1/2 cups whole wheat flour<br />
1 cup all purpose flour<br />
1 cup sucanat (or sugar)<br />
1 tbsp pumpkin pie spice<br />
1 tsp cinnamon<br />
1 teaspoon baking soda<br />
1/2 teaspoon salt<br />
2 eggs, lightly beaten<br />
15 oz can Libby's Pumpkin<br />
1/4 cup vegetable oil<br />
2 cups peeled, cored and chopped apple<br />
1/4 cup water (if needed)<br />
<br />
Topping: <br />
<br />
1/4 cup all purpose flour<br />
1/4 cup oats<br />
1/4 cup brown sugar<br />
2 tbsp butter<br />
<br />
Method: <br />
<br />
1.Preheat oven to 350 degrees F. Lightly grease 18 muffin cups or use paper liners. <br />
<br />
2.In a large bowl, sift together flour, sugar, spices, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups. <br />
<br />
3.In a small bowl, mix together oats, flour and brown sugar for topping. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter. <br />
<br />
4.Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean. <br />

Let me start at the (most recent) beginning. I moved to Louisville and back into my parents' house in the beginning of 2008. My plan was to take care of myself, save money, and generally get my life together.<br />
I researched and researched to find the gym that was the "perfect fit" for me. That gym was <a href="http://becomingperfectlyimperfect.blogspot.com/p/fitness.html">Baptist East/Milestone Wellness Center</a>. I started working out and logging my daily calorie intake. I'm a <a href="http://www.eatright.org/">registered dietitian</a>, after all, I <strong>know</strong> <strong>how</strong> to lose weight.<br />
<br />
In my case, <u>knowing</u> and <u>doing</u> are two entirely different things. <br />
<br />
At any rate, I was determined to do things the "right way" this time. SLOOWWLY. Lifestyle change versus diet. I wanted to have a healthy relationship with food and exercise for the first time in my life. I still do. <br />
<br />
For several months I ate well, but didn't deprive myself. I went to the gym 5-6 times a week. <br />
I lost nothing...<br />
I had my basal metabolic rate checked. I cut my calories even further. I exercised twice a day. <br />
I lost 1-2 pounds a month. <br />
<br />
This just didn't seem right, and I was getting very discouraged. At my next doctor's appointment I asked if they would check my thyroid. The doctor wasn't sure it was necessary, but they were going to draw blood anyway, so she agreed. A few days later I got a phone call letting me know I had <a href="http://www.mayoclinic.com/health/hypothyroidism/DS00353">hypothyroidism</a>. To make a long story short, I started on medication and resigned myself to the fact that I was going to have to try even harder to lose weight. <br />
By November of 2009 I had lost about 30 pounds and had been exercising regularly for almost 2 years. I felt amazing. I even completed a 5K, 10K, 10 miler and a <a href="http://becomingperfectlyimperfect.blogspot.com/p/team-in-training.html">half marathon</a> during this time period. I thought maybe, just maybe, I could lose the weight and keep it off...<br />

Things were going so well, I decided it was time to move out on my own. I bought a condo and moved in. I guess now would be a good time to tell you that I don't exactly do well with big changes. When I moved, my entire routine fell apart and all of my good habits went out the window. I began eating more convenience foods, snacking late at night and skipping my workouts. I had to get my condo in order, after all. That is what I told myself. The stress of moving and the changes in my routine also caused me to turn to food for emotional comfort again. <br />

Days turned into weeks, and weeks turned into months.<br />

It has now been almost a year since I moved into my condo, and I am still not back into a healthy routine. My fitness and energy levels have bottomed out, I've gained back every single pound it took me almost 2 years to lose, and I feel awful.<br />
<br />
So why am I doing this to myself? (I don't really know for sure, to be honest).<br />
I do know that I am extremely disappointed in myself and extremely discouraged. I am not even going to get into how many times I have tried to lose weight and failed to keep it off. At some point, you start to wonder if you can do it. At some point you<strong> just. don't. want. to. fail. again. </strong><br />
<br />
Now, I've also been given a wake-up call. At my recent physical my doctor informed me that my cholesterol has jumped nearly 30 points. She has given me 90 days to make an improvement with diet and lifestyle before prescribing a statin medication. In addition to that, I've been sick with bronchitis for nearly 3 weeks and was told my weight might be making my breathing problems worse. I am actually starting to <u>get sick</u> as a result of how I am treating my body...<br />
<br />
I can't believe I allowed this to happen. I am ashamed to call myself a dietitian right now. <br />
<br />
I am hoping by writing this I will see in black and white the reasons that I need to (and want to) make changes in my life. I am hoping this provides the kick in the pants that will motivate me. I am hoping the fact that I am damaging my body each day I make poor decisions will finally sink in. <br />

I will keep trying. To celebrate my birthday last night, my parents and I went to eat dinner at <a href="http://www.ramsiscafe.com/">Ramsi's Cafe on the World</a> . <br />

This was my first time eating at Ramsi's and I chose it in part because there are several vegetarian and vegan options on the menu. <br />

I also chose it because the last time I tried to eat there it was a Saturday night and we waited 2 hours before giving up and going somewhere else...<br />

I figured it would be much easier to get in on a Tuesday night, and it was. We didn't have to wait at all to be seated. <br />

I love homemade soups, chili, warm oatmeal and the other cool weather comfort foods. I also really want to set aside time to carve pumpkins for Halloween this year...and toast up the pumpkin seeds! </div><div class="separator" style="clear: both; text-align: left;"><br />

</div>Millet is small, round in shape, and can be white, grey, yellow or red. The most common form in stores is the pearled, hulled kind. It is a tasty grain that has a mildly sweet, nut-like flavor which is intensified when the grain is toasted. Like all grains, before cooking millet rinse it thoroughly under running water to remove any dirt or debris. To enhance the nutty flavor, toast the grains first by placing in a dry skillet over medium heat, stirring frequently. When they have achieved a golden color, add one part millet to two and a half parts boiling water or broth. After the liquid has returned to a boil, turn down the heat, cover and simmer for about 25 minutes. The texture of millet cooked this way will be fluffy like rice. If you want the millet to have a more creamy consistency, stir it frequently adding a little water every now and then. <br />

<strong>Southwestern Sweet Potato and Millet Salad</strong><br />

Makes 4 servings. <br />
<br />
Ingredients:<br />
2.5 cups cooked millet (1 cup raw)<br />
2 medium (about 1 pound) sweet potatoes<br />
1 red bell pepper, diced<br />
1/4 cup minced red onion or shallot<br />
salt<br />
freshly ground black pepper<br />
1/2 cup extra virgin olive oil<br />
2 tbsp fresh lime juice<br />
1/4 tsp red pepper flakes<br />
1/2 tsp cumin<br />
1/4 cup toasted pepitas<br />
1/4 cup minced fresh cilantro (optional)<br />
<br />
Method:<br />
1. Cook millet according to preparation instructions above (1 cup millet plus 2.5 cups water). <br />
2. Meanwhile, peel the sweet potatoes and dice into 1/2 inch pieces. Cook in salted, boiling water until tender, about 15 minutes. Drain well. <br />
3. Toss together sweet potato, millet, bell pepper and onion; sprinkle with salt and pepper. <br />
4. Whisk the oil, lime juice, red pepper flakes and cumin together in a smalll bowl. Toss the salad with about 1/2 of this mixure; add all or some of the rest to taste. Adjust seasonings, garnish with toasted pepitas and fresh cilantro.<br />

They can be added to anything for a punch of flavor. The best part? I can pronounce all of the ingredients. Plus, 1 teaspoon of Garlic Garlic is equivalent to 1 clove of fresh garlic. I like to have that option if I don't have fresh garlic or don't want to get my fingers smelly by chopping it up! Onion Onion can also be substituted for fresh onion. <br />

The rest of the evening was spent placing orders, socializing and chowing down on Perfectly Potato Cheddar Soup, Nana's Apple Cake, Artichoke and Spinach dip and Key Lime Cheese Ball with Twisty Grahams.<br />

This week consisted of an out-of-the-ordinary occasion. I showed up at work on Tuesday morning to find my ecstatic co-worker friend, Jan, jumping around the clinic exclaiming that she won free tickets to a private <a href="http://www.kingsofleon.com/">Kings of Leon</a> show in Nashville, TN! Guess who she wanted to go with her? <u>This girl!</u> <br />

I love spur of the moment trips (I think it just feels more exciting) so I was on board. We scrambled to find coverage for our clinic and get our time off approved. Before long, we were on the road to Music City! In all the haste, I forgot my camera. It turned out that taking pictures at the concert was strictly forbidden anyway. It makes me sad because it was a very exciting day and I wish I could share more of it. <br />

I do have some sad news, though. My camera was in my purse yesterday and now it is nowhere to be found. I hope it turns up, but in the meantime, I developed a roll of 35 mm film today. Yes, that's right, 35 mm film. It's been awhile since I've used a camera that isn't digital, but my dad lent me his old SLR so that I could practice using it. I want to decide whether to upgrade my point and shoot camera or take the plunge and get a DSLR. Now, it is looking like I may have to make that decision sooner rather than later...<br />

<strong><u>Veg Update</u></strong><br />

I am officially halfway through my <a href="http://becomingperfectlyimperfect.blogspot.com/2010/08/goin-veg.html">30 day vegetarian challenge</a>. This week has been full of mixed feelings. Early on, I started to get tired of my vegetarian options. I am still so new to this lifestyle that I have trouble improvising. I realized I have been following recipes to the letter (not my usual style) because a lot of the ingredients I am using are new to me. Even though I am out of my comfort zone, I am thankful for this experience <strong>because</strong> I am learning to use new ingredients and think outside of meat and potatoes. Yes, it can be frustrating at times, but I know it will get easier. <br />

I decided to search out some vegetarian and vegan friendly restaurants in the Louisville area and, wow! I was totally surprised to see quite a few options and they sound great! I am excited to start trying out some of these venues and I will keep you informed of what I discover along the way. A simple internet search seemed to open up a world of possibilties and the feelings of vegetarian boredom vanished immediately! There is so much for me to discover! <br />

<strong><u>Juice...</u></strong><br />

I feel like I am constantly reading about other bloggers' experiences with juice bars and how wonderful they are. I was pretty sure nothing like that existed in Louisville, but I started an internet search nonetheless. I was <strong>craving </strong>some fresh juice on Saturday. Well, I had set my mind on some juice so I was about to head to an ATM when the guy behind the counter said, "Hey, its a nice day. I'll make you something on the house." Amazing! Well, it turns out my parents got a bag of beets in their CSA share last week. They aren't crazy about beets so I offered to "do something" with them. As I was catching up on blog reading one night, something caught my eye: <strong>beet hummus</strong>. I was already thinking that I would use roasted garlic instead of raw the next time I made chickpea hummus. </div><div class="separator" style="clear: both; text-align: left;"><u>Ingredients:</u></div><div class="separator" style="clear: both; text-align: left;">1/2 pound beets, scrubbed clean, cooked, peeled, and cubed</div>2 Tbsp tahini sesame seed paste<br />
4 Tbsp lemon juice<br />
1 Tbsp red wine vinegar<br />
2 cloves garlic, roasted<br />
1 Tbsp ground cumin<br />
1 Tbsp lemon zest <br />
Generous pinch of sea salt <br />
Fresh ground pepper to taste<br />
<br />
<u>Method:</u> <br />
1. To roast garlic, place cloves on a square aluminum foil and drizzle with olive oil. Gather the aluminum foil into a pouch and set it directly on the rack of 250 degree oven. Roast until the garlic becomes very soft, approximately 1 hour ( I took mine out of the oven when my entire kitchen started smelling of garlic).<br />
<br />
2. Meanwhile, wash beets and cook in boiling water for about 30 minutes, or until they are tender enough to stick a fork through. Strain and run cold water over the beets, then remove the peels once they are cool enough to touch. <br />
<br />
3.Place all ingredients in a food processor (or blender) and pulse until smooth. Taste and adjust seasonings and ingredients as desired.<br />

</div><div class="separator" style="clear: both; text-align: left;"><strong>Whole Wheat Pizza Dough</strong></div>(from <a href="http://rhodeygirltests.com/2009/10/29/whole-wheat-pizza-dough/">Rhodey Girl Tests</a>)<br />

Ingredients:<br />
<br />
1 package (2 1/4 teaspoons) active dry yeast<br />
1 1/2 cups warm water<br />
2 cups whole wheat flour<br />
1.5 cups bread flour<br />
2 teaspoons salt<br />
1 teaspoon sugar<br />
olive oil for greasing the bowl before rising<br />
<br />
Directions:<br />
<br />
1. In a small bowl add the water and sugar and sprinkle the yeast on top. Let sit for 5-10 minutes until the yeast has dissolved and the water mixture is slightly bubbly. Stir to dissolve if needed. Meanwhile, mix the whole wheat flour, bread flour, and salt in a large mixing bowl.<br />
<br />
2. Add the water/yeast mixture to the flour and combine. As the dough starts to come together dump it out on a floured surface and knead until the dough becomes smooth and elastic, about 1-2 minutes.<br />
<br />
3. Put the ball of dough in a large bowl coated with olive oil seam side up (I just wash the one previously used for the flour). Flip the dough over so that both sides of the dough are coated with the oil. Cover the dough directly with plastic wrap and leave in a warm place until the dough has risen, about one hour.<br />
<br />
4. Once the dough has grown in size, press it down, split into two for thicker crust pizza and into four for thin crust pizza*, and reform each portion into a ball. Place each in a bowl and cover with plastic wrap, letting it rest for 15 minutes.<br />
<br />
To make pizza:<br />
<br />
1. Pre-heat oven to 500 degrees. <br />
<br />
2. Roll out dough on a floured surface. Brush with olive oil and place on pizza stone. Puncture in a few places with a fork so that the dough doesn’t bubble too much. Bake for 5-6 minutes until the bottom of the crust is lightly brown.<br />
<br />
2. Pull the pizza stone with the crust on it out of the oven and add toppings of choice. I topped mine with pesto, broccoli, red bell pepper, feta cheese, onions, kalamata olives and mozzarella cheese. <br />

This was one of the better dough recipes I've tried, though, so its a keeper. I divided it into 4 pieces and froze 3 of them. When I am ready for pizza all I need to do is set the dough out to thaw. I just happened to have all of the ingredients I needed so decided to give it a try. </div><div class="separator" style="clear: both; text-align: left;"><br />

2 tablespoons olive oil<br />
2 tablespoons honey <br />
1/2 tablespoon chili powder <br />
1/2 tablespoon black pepper <br />
1 teaspoon paprika <br />
1 tablespoon sesame seeds <br />

Preparation:<br />
1. Pre-heat oven to 375 degrees. <br />
2. Press excess liquid from tofu. Wrap several paper towels around tofu, and place tofu in between two plates. Let stand for 15 minutes. <br />
3. Cut tofu into 1 inch by 1 inch pieces. <br />
4. In a small, microwave-safe bowl, mix olive oil, honey, chili powder, black pepper, and paprika. Microwave marinade for 35 seconds and stir thoroughly.<br />
5. Coat each piece of tofu in marinade and place on baking sheet. <br />
6. Sprinkle sesame seeds on top of tofu. <br />
7. Cook at 375 for 30 minutes, turning once. <br />

Turns out, coating the tofu in marinade was easier said than done. The marinade was thick (and hot, from heating). When I attempted to coat the tofu, it started to break up (maybe I didn't get enough of the liquid out?). The tofu got stuck in the sticky marinate and then I burned my fingers trying to get it back out. <br />

I was fairly certain this recipe was not going to work out, but I perservered. <br />

I've decided to post a recap of what I have done or haven't done towards reaching my goals each week. Yes, I want to share my nutrition knowledge and I want to inspire others...but my priority right now is getting myself healthy and I want my posts to reflect that. <br />

<strong><u>Vegetarian week in review: </u></strong><br />

<strong>Feelings: </strong>I was extremely tired all week. I don't know if this was diet related or something else, but my energy levels were very low. I have had a lot of allergy symptoms, which could also be contributing to the fatigue. I still don't miss meat. In fact, the thought of it makes me feel queasy at times. I've received a lot of good feedback from comments about books and other advice about vegetarianism. I really appreciate it and plan to look into the suggestions! <br />
<br />
<strong>Obstacles:</strong> My brother's birthday dinner with the family (he requested rotisserie chicken) and lunch out with my co-workers. That's all. Not bad I'd say. I ended up bringing an Amy's California Burger to the birthday dinner, eating the veggie sides and enjoying the time with my family. (I may or may not have jokingly mentioned they were eating decaying animal carcass). My co-workers graciously agreed to a restaurant with vegetarian options and we all had a good meal. Not once this week did I feel deprived of anything, which surprised me a little. <br />
<br />
<strong>New things tried:</strong> I tried a beet. I don't think I've ever had one before. I didn't hate it...It was sweet and kinda crunchy. I put one little piece in my salad at Whole Foods. It's a good way to try knew things. I also tried nutritional yeast for the first time. It's tasty. Speaking of the salad bar at Whole Foods, I love it! Its not new to me, necessarily, but in the past I would compose a salad of all the things I liked. I didn't give much consideration to whether the components would actually taste good <em>together.</em> With a little forthought, its become an excellent "fast food" option. <br />

I logged my foods on the <a href="http://www.calorieking.com/">Calorie King</a> website one full day this week, which is unacceptable. I know myself pretty well and if I do not keep track of my calories at this point in my weight loss journey, I go over the limit. By not logging my calories I am blatantly avoiding facing up to what I am eating. I was very hungry this week and had a little bit of trouble controlling myself. <br />
<br />
<strong><u>Exercise:</u></strong><br />
<br />
This week was actually pretty laughable considering my day didn't used to feel complete without exercise. I went to two Zumba classes and took two 20 minute walks on my lunch break in total this week. It's better than nothing, but I know from experience I feel better and am more successful with weight loss when I exercise consistently. <br />

2 15-oz cans of garbanzo beans (chickpeas), drained and rinsed<br />
2/3 cup of tahini (roasted, not raw)<br />
1/3 cup freshly squeezed lemon juice<br />
1/2 cup water<br />
1/4 cup olive oil<br />
1/2 teaspoon of salt<br />
Pine nuts (toasted) and parsley (chopped) for garnish<br />
<br />
Directions: <br />
1. In a food processor, combine the mashed garlic, garbanzo beans, tahini, lemon juice, 1/2 cup water, and olive oil. Process until smooth. Add salt, starting at a half a teaspoon, to taste.<br />
<br />
2. Spoon into serving dish and sprinkle with toasted pine nuts and chopped parsley.<br />
<br />
3. Serve with crackers, raw vegetables such as carrots or celery, or with pita bread. <br />
<br />
Makes about 3 cups.<br />

I have a love/hate relationship with <strong>nut buttah.</strong> It's healthy, filled with monounsaturated fats (the good ones), protein and vitamins. It's tasty (probably one of my favorite foods ever, in case you can't tell). <br />
<br />
It's also a highly concentrated source of calories. For those of us trying to lose weight, portion control is pretty important. A 2 tbsp serving contains approximately 180 calories and 16 grams of fat. That adds up fast. <br />
<br />
I may or may not have been eating peanut butter <strong>out of the jar by the spoonful</strong> this week...<br />
<br />
I may need to cut myself off until I can demonstrate some self control. <br />
<br />
In all honesty, it's been a rough week. I've been tired and seriously lacking motivation. I'm not logging my calories, and (big surprise!), I'm not losing any weight. I finally decided that I need to share the good and the bad on my blog, because its all part of the process. I want to act like this is easy peasy and I'm loving every minute of my weight loss journey, but that would be a big, fat lie (pun intended).<br />

This is not my first attempt to lose weight, nor my second or even fifth. Let me tell you, it does not get any easier. If anything, it gets harder. Failing at something time and time again makes it much harder to convince yourself that you <u>can</u> actually be successful. Then I remind myself that I have to keep trying. What other choice do I have? So I trudge on....<br />

<strong><u>Veg Update:</u></strong><br />

<br />
PROS: This experience has already exceeded my expectations. It has turned into something that is much more than a "meat-free" diet. I am enjoying trying new foods and really <strong>tasting </strong>them. I have started to savor the flavors of vegetables like never before. Meat is often the focal point of our meals and the other foods are just "sides". When I eliminated meat from the picture, the veggies, grains and beans stepped into the spotlight. I have gained a new perspective on food, to say the least. Also, I don't miss meat AT ALL. <br />
<br />
CONS: Sometimes finding a <strong>decent</strong> veg-friendly option when eating out is a challenge. You don't quite realize meat is everywhere until you are trying to avoid it. Many restaurants around here <strong>do</strong> have amazing meat-free dishes, but eating out can be a complication. I have also had some social conflict. I am not comfortable inconveniencing my friends or family because of my choices. I don't want people to feel like they have to only eat places with vegetarian options or cook a meat-free dish when I come over for dinner. Everyone has been super accomodating so far...but is that because they think this will be over in a month??<br />

Lazy kitties. <br />

Although being lazy is tempting, on Sunday I like to prepare for the week ahead. I try to make one or two dishes that will serve as quick meals when I don't have time (or energy) to cook. This week my lunch bag will include Quinoa with Chickpeas and Tomatoes. It keeps well in the refrigerator and actually becomes more tasty after the flavors are able to marinate for awhile. <br />

Some of you might be thinking, "What is so great about quinoa"? Well, I will tell you. <br />

<div class="separator" style="clear: both; text-align: center;"></div>Quinoa (pronounced keen-wah) is an ancient seed that is high in protein, calcium and iron, a relatively good source of vitamin E and several of the B vitamins. It contains an almost perfect balance of all eight essential amino acids needed for tissue development in humans and is therefore considered a "complete protein". Although it is technically a seed, it is used as a grain and substituted for grains because of it's cooking characteristics. The fat content of quinoa is relatively high when compared to other grains, but it is low in sodium and also provides valuable starch and fiber. Quinoa is a tasty and versitile, supplying variety as well as good nutrition. If you haven't tried Quinoa...do it.<br />

</div><strong><u>Quinoa with Chickpeas and Tomatoes</u></strong><br />

<strong>Ingredients:</strong><br />
1 cup quinoa<br />
1/8 teaspoon salt<br />
1 3/4 cups water<br />
1 cup canned garbanzo beans (chickpeas), drained<br />
1 tomato, chopped<br />
1 clove garlic, minced<br />
3 tablespoons lime juice<br />
4 teaspoons olive oil<br />
1/2 teaspoon ground cumin<br />
1 pinch salt and pepper to taste<br />
1/2 teaspoon chopped fresh parsley<br />
<br />
<strong>Directions:</strong><br />
1.Place the quinoa in a fine mesh strainer, and rinse under cold, running water until the water no longer foams. Bring the quinoa, salt, and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, 20 to 25 minutes. <br />

2.Once done, stir in the garbanzo beans, tomatoes, garlic, lime juice, and olive oil. Season with cumin, salt, and pepper. Sprinkle with chopped fresh parsley to serve. <br />

Makes 6 servings. <br />

1 cup unsweetened vanilla almond milk<br />

Bring all ingredients to boil over high heat. Reduce to low heat, cover and cook for 10 minutes, stirring occasionally. <br />

The mashed banana makes this recipe, I think. It adds an amazing creaminess and just enough sweetness to the mix. I am sure this would work wonderfully with oats, too. <br />

A short note about my toppings:<br />

Slivered <strong>almonds</strong> are a pantry staple for me. They are fantastic sprinkled on salads, cereals, yogurt and more. I buy the plain, raw, slivered almonds found in the baking aisle at the grocery store. I spread them out on a baking sheet and stick into a 350 degree oven. I know they are ready when they smell toasty delicious and are lightly browned. I then store them in a mason jar so they are ready when I need them. <br />
<br />
<strong>100% pure maple syrup</strong> has recently become a favorite sweetener of mine (this is NOT the same as Aunt Jemima...this is the real stuff). First of all, I think it has the most flavor and sweetness per tablespoon (and per calorie). Second, it is not refined and stripped of nutrients like cane sugar. It contains traces of the minerals potassium, calcium, manganese and zinc. Yes, it is still sugar and should be used in moderation, but I like the idea that it provides some nutrition. <br />

<strong><u>Vegetarian Carolyn??</u></strong><br />

Moving on from my breakfast obsession, I have news! On a whim I picked up the book, <a href="http://www.skinnybitch.net/">Skinny Bitch</a>, and skimmed it while browsing in Border's. In the past I pretty much told myself I wanted nothing to do with this book, and nothing to do with veganism. My curiosity got the best of me...<br />

While I'm not sure I agree with everything said in this book, it did get me thinking. What if I gave it a shot? Would I notice a difference in my energy levels and my health? Why not try it out? After some thought, I decided to become lacto-ovo vegetarian for <u>30 days</u>. "Lacto-ovo" meaning I will still eat eggs and dairy (no sense in trying to do too much too fast), but no meat, poultry or fish. Although I am not banning eggs and dairy, my goal is to try out as many vegan recipes and products as possible. <br />

I technically started my meat-free diet on Monday of this week, but I have decided to officially start it today, with this blog post. For the next 30 days, I'm goin' veg! I will track how I am feeling as well as triumphs, trials and fails during the course of this experiment. <br />

My goal was to blog daily, and here it is over a week since my last post. What happened? Well, life happened I suppose. I have a full time job and am working on my MBA at UofL in the evenings. I am also trying to exercise, eat right and try new recipes. Recently, I got swept up in the blog world and desperately wanted to be a part of it. So I started this blog. All was going well until a couple of late-nights and homework assignments pushed me over the edge. I was soo tired and irritable, I didn't feel like doing anything at all! Something had to give...<br />

I realized that I was putting too much pressure on the blog. After all, I wanted it to be PERFECT, right? Turns out, blogging is not as easy as it looks. Snapping pictures and writing about my life is the least of it. Lets just say I am not a big fan of website design right now...mostly because I have no clue what I am doing. I've given a lot of thought to whether I should keep blogging or put it on hold. I decided it is something I want to do and something I enjoy. So I'm not perfect...so what?? I have to start somewhere. I am going to continue blogging, but try not to stress myself out about it. As I go along, I am sure it will get easier and my blogging <em>skillz</em> will improve. <br />

At this point, I haven't divulged too much of my history, but I am one of those people who tends to see everything as "all or nothing". If something isn't exactly right, I want to start over or quit. It has taken years for me to learn be okay with mistakes and slip-ups, especially where food is involved. I still remember the first time I ate a piece of cake and still went to the gym (prior to that, if I ate one "bad" thing, the whole day was ruined). I occasionally find myself searching for that level of perfection that I will never be able to attain, but now I am able to reason with myself. It feels good to find that middle ground, I believe that is where happiness is. <br />

Cover and stash in refrigerator overnight. The oats soak up the liquid and become a creamy mixture. In the morning, get creative with toppings and mix-ins! No cooking or heating required. <br />

This morning I went to the baptism of Karla and Aaron's first baby boy, James. Karla and Aaron have been friends of mine since the college years. James was precious and didn't make a peep during the service! <br />

I've wanted to try a green smoothie for quite a while but I'm not gonna lie, I was a little scared. I had expected some veggies in this "premium quality" food. I definitely wish I had opted to cook something myself, plus it would've been healthier. I wanted to snap a picture so I waited until I got home and even plated it up. I have been much more mindful of what I am eating already. I like to use 100% whole grain breads. Otherwise the flour is processed and stripped of vitamins and nutrients as well as fiber. I aim for 25-35 grams of fiber each day. It has multiple health benefits, plus it slows digestion and helps me stay full longer. This bread has 4 grams of fiber per slice (although I noticed added chicory root fiber in the ingredients). <br />

I sprayed the pan with some cooking spray and added a sprinkle of sea salt -- just in the mood for simple eggs this morning. A tip for cooking eggs is to keep the heat medium low, cook slowly, and remove from heat when they still appear slightly undercooked. </div>This fruit spread is a new product I tried. It is a classic example of why reading the ingredients is so important! I assumed since I bought this in the health food section and it is called "fruit spread" that it would be sweetened with fruit juice instead of added sugars (like used in jams and jellies). At least, this has been my experience in the past...<br />
